Tonga Twist

The Players:

  • 3 oz Pineapple Juice
  • 3 oz Grapefruit Juice
  • 0.5 oz Amarena Cherry Syrup
  • 4 oz Club Soda
  • Pineapple & Mint
  • Amarena Cherry

The Scene:

Place all the ingredients in a tall glass with ice and mix with a straw. Put a couple of Toschi Amarena cherries to garnish.

The Concoction | State Fair Lemonade

The Players:

  • 6 Large lemons
  • 1½  Cups granulated sugar
  • 4 Cups boiling water
  • 1 Cups

The Equipment:

  • Vegetable Peeler
  • Pitcher
  • Large Bowl

The Scene:

Wash and dry the outsides of the lemons

Peel the zest of the lemons with the Peeler into the bowl.

Add sugar into the bowl with the l lemon peels and stir well. Let rest for a few hours (2+ hours min)

The sugar will absorb the oils and moisture from the peels. It should look wet.

Pour the boiling water in the bowl of the mixture of lemon peels and sugar. Stir until all the sugar has been dissolved.

Let cool to room temperature.

Strain the peels from the liquid. Pour the liquid into the pitcher.

Juice the lemons (about 1½  Cups)  and pour it into the pitcher then add ice.

Stir until ice has melted and place in fridge to chill.

The Finally:

Fill tall glasses with ice and pour.

The Concoction |Tom and Jerry

The Players:

  • 3 large eggs
  • 1 teaspoons vanilla bean paste
  • ¼ teaspoon cinnamon
  • ¼ teaspoon allspice
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon cream of tartar
  • ½ pound powdered sugar
  • Spiced rum
  • Boiling water or Warm milk

The Scene:
Separate egg whites and yolks into two different mixing bowls.

Yolk Bowl:
Mix in the vanilla bean paste, cinnamon, allspice, cloves, and nutmeg with the yolks. Slowly mix in the powered sugar. Once complete you should have a very think substance.

Egg White Bowl:
Add Cream of Tartar and whip the egg whites until stiff peaks form then set aside.

The Union:
Slowly start whipping in the fluffy egg whites in the yolk bowl. Once complete you will have a very thick and rich batter.

The Finally:
Finally it’s time to make the cocktail. Add 2 to 4 tablespoons into a mug and add a shot of spiced rum. Very slowly add hot water to the mug while stirring. The slower the better. The eggs in the batter will curdle if you go too fast.

Once the marriage has been completed you should have a beautiful foam head.

A few sips will put a smile on your face.
